Hungry Man Hamburger Pasta-Lori Hansen

Angie's Hungry Man Hamburger Pasta

Ingredients:
1 Small Package Angel Hair Pasta
1 Pound Ground Beef
1 Stick of Butter
4 Cloves Garlic (or 2 teaspoons minced garlic)
¼ Cup Parsley Flakes
1 Can Black Olives Sliced
1 or 2 Tomatoes Diced
1 cup Fresh Parmesan Cheese Grated
Salt and Pepper

Instructions:
Brown ground beef and season to taste with salt and pepper. Boil angel hair pasta as instructed on package and drain when cooked. Set aside beef and pasta. Sauté butter and garlic in small sauce pan for approximately 2 minutes. Put pasta in large bowl. Pour butter and garlic sauce over pasta and add parsley flakes, mix together. Dish up pasta and top with scoop of beef, scoop of tomatoes, scoop of olives and parmesan cheese to liking.

*I have to tell you...Cameron rated this a 10! I have never even gotten a 10, even the fanciest meals they were 9's, but this...was a 10! So I hope you like it!

Angel Hair Pasta w/Beef - Jessica Perry

I made this dish last night for dinner and it was great! Trent loved it and it was not a totally heavy pasta. Plus it was so easy to make. It takes about 15 minutes to prepare and will Serve about 6-8 people, so for smaller families just adjust the amount of ingredients you use!

Ingredients:
16 oz. angel hair pasta
2 T. Olive Oil
2 lbs. beef sirloin, thinly sliced
1 red onion, sliced
8 oz. mushrooms, sliced
2 med yellow quash, sliced
2 med zucchini, sliced
1 tsp. minced garlic
2-14 oz. cans diced tomatoes, drained (I used the Italian Style)
1 tsp. salt
1/2 tsp. dried oregano
1/4 tsp. black pepper
parmesan cheese

Directions:
1) Cook pasta as directed. Drain and cover to keep warm.
2) Heat oil in skillet over med-high heat. Cook the beef and onion, stirring continually, just until beef is slightly pink. (about 5 minutes)
3) Add mushrooms, squash, zucchini & garlic to beef. Saute until beggies are crisp-tender. (about 5 minutes)
4) Add tomatoes. Cook until tomatoes are heated through. Stir in seasonings. Add more if you want for taste.
5) Toss noodles & beef mixture together and top with parmesan cheese.

Serve with warm bread for a yummy and easy to prepare dinner that everyone will enjoy!!

Pumpkin Pie Dessert Squares-Jen Hansen

Crust:
1 pkg. yellow cake mix minus 1 cup
1/2 c. margarine, melted
1 egg

Set aside 1 cup of the cake mix. Crust: Prepare the crust by combining the remaining cake mix, butter, eggs. Press into greased 9x13 inch pan.

Pudding:
1 large can pumpkin
2 1/2 tsp. pumpkin spice
1/2 c. firmly packed brown sugar
2 eggs
Prepare the pudding filling by combining pudding ingredients. Beat together until smooth and pour over the crust.

Topping:
1 c. reserved cake mix
1/4 c. sugar
1 tsp. cinnamon
1/4 c. margarine
Prepare topping by combining all topping ingredients. Crumble and sprinkle over the pudding mixture. Bake at 35o degrees for 45 to 50 minutes until a knife inserted near the center comes out clean. Serve plain or with whipped topping.

Pumpkin Cake-Lori Hansen

1 small pumpkin in the can
1 1/2 cp. sugar
1 1/2 cp. Flour
3 eggs
1/4 cp. oil
1 1/2 tsp. Baking Soda
1 1/2 tsp. Cinnamon
1 1/2 tsp. Salt
-Bake @ 350 for 20 minutes in a large cookie sheet. Spray the pan and lightly coat with flour.

Cream Cheese Frosting
8 oz. pkg cream cheese softened
1cp. soft real butter
2 2/3 cp. powdered sugar
2 tsp. vanilla
Add a little milk (about 1 or 2 tbsp.) and whip a long time until really fluffy.

*With out fail everytime I make this people want the recipe. It is that good!

Tortellini Soup *Lauren Perry*

Cook in a pot-
1/2 lb of mild italian sausage
1/2 lb of hot italian sausage
1/2 lb of ground beef
3 garlic cloves, chopped
3/4 cup of onion, chopped

once cooked add-
1 16-ounce can of diced tomatoes (really good with oregano, basil, and garlic ones)
1 8-ounce can of tomato sauce
1 zucchini, cut sliced and then halved (looks like a half of a circle)
1 large carrot, same as above
1 can of red kidney beans (drained)
1 can of corn (drained)
1 batch of sliced mushrooms
1 tsp of basil
2 tsp of oregano
season with some garlic salt
around 6 cups of beef broth (I usually use 2 large box's and maybe half of 1 can)

-cook on stove for about 40 minutes
-add package of tortellini for the last 15 minutes

Hawaiian Braised Pork *Lauren Perry*

Ingredients for the pork-

3 1/2 pounds boneless country-style pork spareribs, cut into 1 1/2-inch cubes
3 tablespoons vegetable oil
6 garlic cloves, chopped
4 green onions, chopped
2 tablespoons chopped peeled fresh ginger
1 14-ounce can low-salt chicken broth
1/3 cup soy sauce
1 tablespoon dark brown sugar
1/4 teaspoon dried crushed red pepper
1/4 teaspoon Chinese five-spice powder
1 1/2 tablespoons cornstarch
1/2 of a head of cabbage (wash and chop)

cook rice separately

Sprinkle pork with salt and pepper. Heat oil in heavy large pot over medium-high heat. Add 1/3 of pork to pot and sauté until brown, about 6 minutes; transfer to bowl. Repeat with remaining pork. Add garlic, green onions, and ginger to pot; sauté 1 minute. Return pork and any juices to pot. Add 1 1/2 cups broth, soy sauce, sugar, crushed red pepper, and five-spice powder; bring to boil. Reduce heat to medium-low, cover and simmer until pork is very tender, about 1 hour 15 minutes (add chopped cabbage with 30 minutes remaining). Stir remaining broth and cornstarch in cup to dissolve; mix into pork. Simmer until gravy thickens, stirring occasionally, about 3 minutes. Season with pepper. Serve pork with cabbage over rice.

Rollo Cookies *Lauren Perry*

Nobody has posted in a while, so I am going to post a few :) These are my favorite cookies! I made them at last years Hansen Family Christmas Party.....

set oven to 350 and get out those greased cookie sheets!

Cream the following-
1 cup of butter
1 cup of sugar
1 cup of brown sugar
2 eggs
1 tsp of vanilla extract

once you are done creaming mix the following in-
2 1/2 c of all purpose flour
3/4 c of Hershey's Cocoa Powder
1 tsp of baking soda

-pour about a half of a cup of sugar into a bowl
-take the foil off of 1 bag of rollo's
-grab each rollo and some dough, put the rollo in the center and make it into a ball
-roll the rollo/dough ball in the sugar until its coated (repeat with rest of batch)
-add to cookie sheet and cook for about 10 minutes

on the stove or microwave-
-melt 1 bag of white chocolate chips
-drizzle over the top of the cookies and let them cool!

These are TO DIE FOR

Eat the whole batch yourself and gain 10 lbs! Its that simple!

White House Baked Beans *Lauren Perry*

This is THE BEST baked bean recipe ever :) It is from the White House, yes, the President of the United States chef's baked bean recipe... use it with caution! You might have the Secret Service after you if you share this with too many people ;)

INGREDIENTS
1 lb baked beans (preferable B&M brand) (do not drain)
1 lb of Kidney Beans (drain)
1 lb of Butter beans (drain)
1/2 cup of Ketchup
1/2 cup of Brown Sugar
2 TBS Worcestershire sauce
6 strips of cooked Bacon; chopped (save bacon fat to saute onions)
1 Onion; chopped
1/2 lb of Cheddar Cheese
dash of Mustard Powder
Garlic Salt to taste

DIRECTIONS
-in a pot, saute onions
-drain kidney and butter beans add to pot
-add baked beans with sauce
-add ketchup, brown sugar, and Worcestershire
-add mustard powder and garlic salt
-cook on stove on med/low for an hour
-add chopped bacon and cheddar cheese for the last 15 minutes, stir

"Gorp"

I made this over the weekend for the (Kim) Hansen Family Halloween party, and there were requests for the recipe, so here it is! I wish I had taken a picture of it to post that too.


10 cups Golden Grahams
10 cups Rice Checks
1 bag slivered almonds
1 bag shredded coconut

Syrup:
1-1/2 cups light Karo Syrup
1-1/2 cups sugar
1 cup + 2 tablespoons butter

Combine syrup ingredients, and cook over medium heat. Bring to a boil, and let boil for 2 minutes. Pour over mixture.

You can add things to the mixture for variety. For example, I added Reese's Pieces, for the orange and brown colors. You can add M&M's, pretzel pieces, or really anything you want.

Cafe Rio Salad

Cafe Rio Salad: 8 flour tortillas, uncooked and large enough to cover bottom and sides of dish. Can be purchased at Macy's or Bajio grill. 2 cps. cooked spanish rice (lipton), bbq pork or chicken, Pico de gallo (chopped tomatoes and cilantro), 8 lime wedges, Creamy Tomatillo dressing, 2 cups canned black beans or Pinto beans, 2 bags romaine lettuce, Gaucamole, and corn tortilla strips. (Purchase at Bajio's)

Barbequed Pork
: Place 3 lbs. Pork Roast in crock pot with 1 cup water and cook on high heat overnight of for several hours until tender. Shred with two forks. Season with 1 tsp. Garlic salt 1/4 cp. barbeque sauce, 3/4 cp ketchup, 1/2 cp sugar. These measurements are relative, of course, to your taste and the size of your roast. The Pork at Cafe Rio is very sweet, and I think it adds to the taste of the salad. Leftover Pork roast can be frozen.

Creamy Tomatillo Dressing: 2/3 cp. tomatillo salsa verde (can), 1 1/2 Tbs. sugar, 1 tsp. salt, 1 cup salad oil (vegetable or canola), 2/3 cp mayo, 2 Tbs. lime juice, 1/4 tsp. pepper, 1/4 cp. cilantro or to taste.

* Guaranteed to love this. I have had it twice now and Delicious! My sister goes to cooking classes and they gave her this recipe. I will continue to share more with you after I try them.-Lori

Peach Pie-Savanna Hansen

Peach Pie

3 Large peaches sliced
1 baked pastry shell
2 large peaches mashed
1 cp. sugar
3 Tbs. Cornstarch
1/2 cp. water
2 Tbs. butter
1 tsp almond extract
whip cream for topping

Place sliced peaches in baked pastry shell. set aside. Combine mashed peaches, sugar,cornstarch, and water in saucepan. cook, Stirring constantly until thick, about 5 minutes. Remove from heat and add butter and almond extract. Cool slightly and pour over sliced peaches in pastry shell. Chill 2-3 hours and serve with whipped cream. YUMMY!

Apple Crisp

The apples are on so try this yummy, easy Apple Crisp. *Savanna*

6 medium apples- peeled & sliced and put into Lemon Juice

3/4 c. packed brown sugar
1/2 c. flour
1/2 c. oats
1 tsp. cinnamon
1/2 c. butter or margarine
mix together and crumble over apples

Put apples in bottom of a 9x13 pan and then put the mixture on top.
Bake @ 375 for 40-45 minutes or until apples are soft.
It's really yummy! :)

Easy Caramel Apple's-Lori Hansen

Caramel Apples

1 1/2 cp. Sugar
1 1/2 cp. Brown Sugar
1 1/2 cp. Butter
1 1/2 cp. Corn Syrup
1 can sweetened condensed milk

Small bag of apples - about 8-12 depending on the size of the apples.

Combine and Stir constantly until a rolling boil appears. For those of you who have candy thermometers keep stirring until it is at soft ball. For those of you like me, get a glass of cold water and trickle a little bit in the glass. If it stays together it is done. If it immediately spreads keep stirring and try again.

Then the trick: My sister said you wait for the caramel to cool until it is just barely warm and then you get your apples on a stick and dip into the caramel. I did it and it was so easy and so yummy. I never thought I could do this.

If your going to decorate, decorate immediately after dipping other wise they won't stick. Enjoy.

For a crowd use #10 size cans of both Stagg Chili and Diced Tomatoes
2-3 lbs. Hamburger Cooked with onion and taco seasoning.
1/2 bottle of large Picante Sauce Salsa
Lrg. Can of V-8 Juice
3 Small cans of Black Beans or beans of choice
2 Bags Frozen Corn

And whatever else sounds good. It is just kind of a whatever you have recipe. Enjoy.
Cook in your crockpot on High or Low until heated.

For your normal Family use just regular sized cans of each and smaller sizes of things to make a smaller sized soup.
